recipe-11.13.jpg
Looking for an alternative to your usual humdrum chicken salad? This is the perfect recipe to eat on your Low-Carb Day for a snack or dinner.
Ingredients:
  • 1 medium boneless, skinless chicken breast (4–6 oz)
  • 1 tsp olive oil or safflower oil
  • ¼ tsp garlic pepper seasoning blend
  • 1 ½ cups torn mixed greens
  • ¼ cup sliced cucumber
  • 1 radish, sliced
  • 1/4 medium red bell pepper, sliced
  • 3–4 yellow and/or red grape tomatoes, halved
  • 2 Tbsp balsamic vinaigrette salad dressing
Directions:
  1. Brush chicken breast on both sides with olive oil. Sprinkle with garlic pepper seasoning.
  2. In a pan over medium heat, cook chicken on both sides until done. Remove from heat. Cut into slices.
  3. In the meantime, arrange salad greens on serving plates. Place cucumbers, radishes and bell peppers on top. Sprinkle with tomatoes.
  4. Top with chicken.
  5. Serve with balsamic vinaigrette salad dressing.
